Dried apricots are a great source of iron, but never really went down well with one of my sons, who doesn’t like the consistency. So I started experimenting, trying to combine them with a source of healthy fat, making them as delicious as real marzipan, but without the added sugar. He can’t get enough of the result, finally gets that extra iron and bursts with energy. A great sweet treat and ‘pick me up’ for big and small.
What you need:
8 dried, pitted dates
8 dried apricots
50g ground almonds
1 tbsp milled flaxseed
1 tsp almond essence
How you do it:
In a food processor blend all the ingredients until you have a smooth paste, adding a dash of water if it feels too crumbly. Form little balls and roll them in the palms of your hands until they are nice and smooth. Keep in the fridge for up to 4 days.
