These patties are loaded with energy and make a great pack lunch, picnic or after school snack. The pine kernels add healthy fats and a wonderful, nutty flavour.
What you need:
Olive oil
2 spring onions – sliced
1 garlic clove – minced
1 small/medium courgette (approx. 60g) – coarsely grated
Half a tin of sweetcorn
30g pine kernels
2 flax eggs – 2tbsp milled flaxseed soaked in 6tbsp of water for 5-10mins
150g spelt or wholewheat flour
1tsp turmeric powder
Salt
200ml water
How you do it:
In a frying pan heat up a little olive oil and add spring onions, garlic and grated courgette.
Fry on high heat stirring frequently until the courgette is soft and translucent. Add sweetcorn and pine kernels and briefly heat up, then turn off the hob.
Mix the flour with a little salt and the turmeric, before adding water and flax eggs whisking it all with a fork until you have a smooth dough.
Now add spoon after spoon of the courgette-sweetcorn mix to the dough and stir until everything is well combined.
In the same frying pan heat up a bit more olive oil and spoon in one tablespoon of the dough at the time, pressing it into a patty.
Fry 3-4 patties at the time (depending on the size of your pan) on medium heat for about 4 minutes, flipping them over half way through.
