Guilt-free ice cream – makes 4

Immune system boosting berry power, made into an ice cream. It’s as simple as that! Takes about 5 minutes to make and is entirely free of refined sugar. No need to wait until the summer.

What you need:

120g frozen blueberries

120g frozen raspberries

(or 240g frozen forest berry mix)

1 medium banana – cut into a few chunks

2 tbsp peanut butter

100ml plant milk

1-2 tbsp date/or maple syrup – (optional) for those who have a very sweet tooth

Ice cream cones – store bought

How you do it:

It’s so easy it’s hardly worth writing it down ;-)

Put all the ingredients in a food processor and blend until smooth, you might have to scrape a few bits off the side of the food processor half way through.

Serve in cones and eat immediately or -if necessary- put it in the freezer for half an hour to make it a little firmer.
