Those of you who follow me on Instagram have probably noticed that I post my children's lunch boxes on most days. The vegan menu at their school isn't great and I have started making them packed lunches about a year ago. Since it’s the end of the school year and I had so many lovely comments, questions and conversations related to this topic I thought I’d post a handful of this years favourite concoctions. More often than not I don’t follow a recipe and I never plan ahead what I’ll cook during the week (I really should!), most of the time it’s simply a jumble of leftovers and bits and bobs I have in the fridge. I always do make sure they are complete in terms of macro nutrients (carbs, protein & healthy unsaturated fats) and by using a variety of colorful vegetables and fruits (whatever is in season) they are also packed with antioxidants/phytonutrients, vitamins and minerals. I hope I can inspire some of you with my sometimes slightly random, but always tasty, healthy, colourful and fibre-packed daily lunch creations. Plant-based for the animals, our health and the health of Mother Earth.
