Pasta “Bolognese” – serves 4

Very simple and equally delicious, this pasta dish is done in 15 minutes. Serve with a side of broccoli or leafy salad and enjoy!



What you need:


2tsp olive oil

1 onion - chopped

2 garlic cloves - minced

500g pasta of choice

2 tins chopped tomatoes

2tbsp tomato puree

1tbsp date syrup

500g firm tofu

salt, pepper and dried basil/oregano (optional) to taste



How you do it:


Preheat the grill in your oven.


Boil a large pan of water with a pinch of salt for your pasta.


With your fingers crumble the tofu into a bowl and drizzle with a little olive oil and salt.


Mix well and pour on a lined baking tray making sure it’s spread out evenly.


Place under the grill keeping a close eye on it as it will bake quickly.


Stir a few times until the tofu is evenly browned and slightly crispy.


Take it out and set aside.


Once the water is boiling cook your pasta according to the instructions.

For the tomato sauce fry the onion in olive oil until translucent. Add garlic and date syrup and fry for a further two minutes stirring constantly until it starts to caramelise. Add the chopped tomatoes and the tomato puree and simmer on low heat until it starts to thicken.

Pour the baked tofu crumbles into the tomato sauce, heat up until piping hot and season to taste. Stir in the drained pasta and serve.
